June - Barbequed Skewers of Scottish Salmon

Why not try something different this summer and try salmon rather then the typical burger.

Serves: 4

Ingredients:

Sweet and Sour Sauce:

  • ½ onion (peeled and chopped)
  • 1 tbsp vinegar
  • 75 ml chicken stock (or water)
  • pinch of mustard
  • 1 tbsp demerara sugar
  • 1 tbsp Worcester Sauce
  • 3 tbsp tomato ketchup
  • 1 tbsp tomato puree
  • 8 pre-soaked skewers

Salmon Skewers:

  • 550 g salmon (cut into cubes)
  • 2 tbsp rapeseed oil
  • freshly ground pepper
  • freshly milled salt

Method:

Sweet and Sour Sauce:

  1. Place salmon in a bowl with one tablespoon of oil and black pepper to marinade whilst making sauce.
  2. To make sauce, sauté onion in remaining oil. Add vinegar, stock, mustard, sugar, salt and pepper and simmer to reduce for 10 minutes.
  3. Meanwhile, stir in remaining ingredients to sauce and simmer to reduce for a further 5mins.

Salmon Skewers:

  1. Pre-heat grill / BBQ and thread salmon on to wooden skewers.
  2. Season with sea salt and grill on a high heat for 3-4 minutes, turning once Serve with boiled rice.
